Pat rides with glucagon in the back pocket of his jersey. That’s because he’s the coach of the JDRF cycling team, a group made up largely of type 1 diabetics. We ride with them up and down San Diego’s Coronado Peninsula.
His daughter, Cami has T1D and she’s home for spring break. We stay with his family, lounge on their sun-drenched terrace, and enjoy grilled thin crust pizzas –– an alternative that’s a bit lighter on our blood sugars. Lynne tells us about a cookie dough recipe she discovered that’s made up mostly of chickpeas, peanut butter, and chocolate chips. Believe it or not, I’m carrying a manual food processor on my bike so we’re always looking for new recipes. Before we leave, Lynne leaves out miniature portions of the ingredients needed to make it on the road.
